This happens because of our profanity filter, which replaces student names with animal names when it flags them as inappropriate. Unfortunately our filter is not always 100% accurate which means some names can be incorrectly flagged.
If this happened when a student created their account, you can fix this by editing the student name directly in your "Classes" tab. Go to your "Classes" section, find the affected students, and click "Manage student settings" under their names to change them back to their real names.

You can also bypass this filter entirely by creating classes from your "Classes" tab in your teacher account.
To prevent this from happening when students join a Live Group game, you can create accounts for your students and have them log in before starting a game. This way their real names will be displayed on the screen.
